Day 14 - TGIF

THANK GOD IT'S FRIDAY! That's really about all I have for today. The weekend is much needed. Especially as I head into the second chemo treatment on Monday.

Eating is starting to get difficult. So I'm going to ask all of you to send me your favorite soup recipes. Cold or hot soups are welcome.

In other exciting news Baby Chang is quickly learning how to pull herself up to a standing position. She is slowly figuring out how to crawl but usually finds it faster to get to her destination using the army crawl method. Lately she's also been stretching her lungs and vocal chords as yelling seems to be her new favorite form of communication.

    Soups!

    Skinny Mini Tortilla Soup - feel free to use the full fat options at the moment
    1 can black beans rinsed and drained
    1 can fat free refried beans
    1 can fat free chicken broth
    1 c. salsa
    1 11 oz can corn w/ liquid
    1 can fat free chicken breast meat

    Mix and heat through. Serve w/ cheese and tortillas.

    Broccoli and Leek Soup and Rice
    1 bunch fresh broccoli or 2 pkg frozen
    1 ½ c. thinly sliced leeks – white only
    1 ½ lbs potatoes – peeled and diced
    7 c. chicken broth
    4 Tbsp unsalted butter
    1/3 c. Arborio rice
    1/3 c. freshly grated parm cheese
    S+P

    Place veggies in large pot w/ broth. Bring to boil. Heat down and simmer cover until veggies tender. Puree and return to pot. Stir in butter, rice. Cook 15 min. Remove from heat and stir in cheese, S, P.

  3. I love the crawling and yelling stage. They are just so loud and always seems surprised that the noise they hear is coming out of them. We are thinking about you and sending positive thoughts your way.
